Knives

Kaminari’s Japanese chef knives are built around one steel and three shapes: an 8" Chef Knife for everyday prep, an 8" Damascus for the cook who wants their best knife to look like it, and a 7" Santoku for vegetable-heavy cooking. All three run high-carbon steel and a pakkawood handle, so picking between them comes down to shape and use, not build quality.

Frequently asked questions

What’s the difference between the three knives?

The Chef Knife and Damascus share the same curved 8" profile — the Damascus is the visual upgrade, forged from 67 layers instead of one. The Santoku is a shorter, flatter 7" blade built for push-cutting vegetables rather than rocking through larger cuts.

Which knife should I start with?

The 8" Chef Knife covers the widest range of cutting tasks and is the standard first buy. Add the Santoku if vegetables are most of what you cook, or the

Does carbon steel rust?

It can, if left wet. Wipe it dry after use and it holds an edge longer than stainless in exchange for that extra bit of care.

Do I need anything else to maintain these knives?

A honing steel keeps the edge aligned day to day; a whetstone restores it once it dulls. Both live in the Knife Care collection.

Are the handles the same across all three?

Yes — every knife uses the same pakkawood handle, so the grip feels identical whichever one you pick up.
