What’s the difference between honing and sharpening?

Honing straightens the edge without removing metal — it’s daily maintenance. Sharpening, on the whetstone, removes metal to rebuild an edge that’s actually gone dull. Hone often, sharpen rarely.

How often should I sharpen my knife?

Hone before each use; reach for the whetstone every 4-6 weeks of regular cooking, or whenever honing stops bringing the edge back.

Do I need both, or just one? 

Both, ideally — the honing steel maintains what the whetstone builds. Buying just the whetstone means re-sharpening more often than necessary; buying just the honing steel means never actually restoring a dulled edge.

Is the whetstone hard to use for a beginner?

There’s a learning curve to holding the angle steady, but starting on the 1000-grit side and finishing on 6000 is forgiving while you get the feel for it.
